Nice Looking Eggplants
On Friday morning’s walk we stopped by our little farmers market for bananas. We also picked up these two eggplants. We also got 16 bananas and a papaya for $2.65.

I noticed that they had a new Christmas decoration, which I took a photo of.

The owner said that his market had been broken into over night and they stole some rice and other items. I know he works hard at a small margin and it is sad to hear that sort of thing.

Don Ray: Can you please let us know exactly where this market is located? Would like to do business there….. ALSO…. May be of interest to some…..eggplant…. We are from the ole’School and, our mother used to buy eggplant (large) and soak it in salt water for a few hrs and pat with paper towels to remove moisture. I found out that, buying small eggplant – deep purple, is much sweeter and I prepare 2 beaten eggs and add flour to the mix to prepare a batter, , peel the small plant, cut into 4 flat strips, dip in the batter and fry in Crisco Vegetable Oil until brown. Do not overcook as it is quite tender. Stick a fork in it.. Drain on paper towels. Please note that, once you peel the eggplant, if you don’t dip in batter right away, it will darken. If you have a “sweet tooth”, after fried, sprinkle some 4X powdered sugar on it. I don’t add any salt or pepper to this…..all natural. We always do Zucchini like this and it is great, or, if you have access to Nabisco Cracker Meal (which you can’t buy here), cut into strips, dip in cracker meal, dip in beaten egg and, once again in cracker meal and fry. Delicious.

you might want to give a “heads up” to your readers. with Christmas approching home break-in tend to increase. i know of two that has happened in barrio nuevo varrital in david, both were expats homes. we tend to be a target.
you might also warn your readers that there are usually more a.a.a.t. traffic police on the roads this time of year looking for their “Christmas bonus”. again, we tend to be a target.

Do you have a food processor? Do you have access to unsalted top saltines?
Place broken saltines in said processor and process until fine crumbs
