Way To Go Edi!

Last Friday night, Edi had her graduation ceremonies for completing all her courses to become a teacher. Since I have been in David, Edi has been the maid that has come twice a week to clean my apartment. This is an individual I truly respect. She has worked very hard in multiple jobs, while going to school in her off hours. The schedule she has maintained was one that only a person with a strong commitment could survive.
I was invited to go to the graduation, but have been suffering from a cold and the 4 hour outing seemed a bit much. I elected to go to a special luncheon on Saturday held in her honor. This was a small group of some of Edi’s biggest supporters and was held at the church she attends.

The meal was a seafood rice and very good. However it was the desserts that really brought rave reviews.
The following photo is a Tres Leches con Fresa (Three Milks with strawberries).

The next photo was a chocolate rum cake.

The last photo is a carrot cake and was my personal favorite. I has some of all three and it was hard to choose a favorite.

The food was great. However, the best part, for me, was being a part of calibrating Edi’s achievement. Way to go Edi!
