Thank Goodness For Edi
Nov 22nd, 2006 by Don Ray
Today is the day that Edi cleans the house. She also cooks when she comes. This is one of my favorites that she makes. It is a sort of a chicken cordon blue plate with a fabulous cream sauce. She also made a cream of broccoli soup that was as good as I have ever had. I guess it is a good thing she isn’t here every day. I would be getting too big for my britches literally.
The last time she was here she asked to see the photos I took of the November 3 parade. She knows I take a lot of photos and I just assumed she wanted to see the latest batch. As she looked at the groups she watched very intently.
Eventually she saw a photo and asked to see the next one. I moved to the next one and she said “no one more”. This is the photo she wanted to see.

It turns out that she was in this group and had seen me walking by taking photos. I hadn’t even noticed her all dressed up and marching so seriously.
Here is a close up of Edi. I am really proud of her. She has worked very hard to complete her education in preparation of becoming a teacher. Way to go Edi!

Oh my that was nice. I assume you had not noticed her while you were taking pictures? Happy endings are always nice. Tell her that Abe Lincoln said, “Hello” to her all the way from Brookville, Ohio.
I wanted to wish you and your family a happy Thanksgiving Day too.
And, thanks for stopping at my place and commenting. I don’t remember when we started to celebrate Thanksgiving but it was probably when we had more money and had moved to a larger town and the stores had turkeys that were dressed and ready to roast.
Thanks for the comment Abe. I would never have thought about not having a thanksgiving get together when I was a kid if I hadn’t read your piece.
I wrote a long comment mostly for Edi, but I send it by email. It`s better so.
Good thanksgiving day to you!
Thanks for stopping in Leena. I will watch for the email for her.
I know Edi from many years ago. She’s a very hard-working young lady but most of all, an honest person. It has taken many years for her to accomplish her educational goal and I am very happy for her.
I see that she has increased her recipes. You should also try her “patacones” (fried green plantains) which I consider the BEST in all of Panama.
Yes, Edi is a very special person. I consider her a part of my family.
Thanks for leaving a comment. I know Edi will appreciate what you have said.
Yum! It looks delicious—You are a lucky man!
I think so myself. Thanks for dropping in Melissa!
